BHC launches ‘diplomatic service’ cookbook

The British High Commission in Nicosia celebrated the launch of “diplomatic service”, a cookbook featuring signature finger food recipes by the BHC’s long-serving Chef, Christina Afxentiou.

The guests enjoyed a dash of class, a mélange of aromas and an assortment of canapés at a wine reception held in association with the Cyprus Red Cross Society.

Welcoming his guests at the Residence, the British High Commissioner, Matthew Kidd pointed out that the idea was to use the interest prompted by the Olympic Games and the Diamond Jubilee, coupled with the superb reputation that the food at the High Commissioner’s Residence seems to have, to raise further funds. “This is the second time we co-operate with the Red Cross and the second time that the proceeds support the Paralympic Committee,” the HC added.

In her address the President of the Red Cross Mrs. Fotini Papadopoulou expressed her gratitude for the assistance provided in 2012 by the British High Commission and the companies importing British products in Cyprus for sponsoring the edition.  

The reception highlights comprised of a cooking demo, highlighting the herbs and spices which Christina uses daily, a tasting menu and a cookbook signing corner. Diplomatic Service, which features 80 recipes including tartlets, cold and hot canapés, kebabs and desserts, was on sale at the event. Proceeds from this book will benefit projects of the Cyprus Red Cross and the Cyprus Paralympic Committee.  

With a career spanning over 20 years at the BHC, Christina has earned her place in the culinary world as a canapés connoisseur/ specialist. Her canapés are undeniably her greatest pride. ‘Canapés can be different every time as they are great opportunities for imagination and improvisation,’ she says with a smile. They are like painting in miniature – where the skill is to include all the taste and pleasure of a full meal in one perfectly formed morsel’.  

The cookbooks can be found at the Red Cross offices and bazaars and Moufflon bookstore.
